Nagasaki Late cabbage, a cousin of bok choy and tatsoi, is a highly revered and nutritious vegetable with deep cultural significance in its native Nagasaki, Japan. Growers in the Nagasaki region have cultivated this crisp, flavorful Asian green for generations, with records tracing its local cultivation back to at least the Edo period. In fact, evidence suggests the variety, known locally as Tojinna, was first introduced during the Tang dynasty (618-907 AD).
