Orach, a relative of amaranth, is one of my favorite greens due to its exceptional heat resistance and flavorful, rich leaves. This hardy plant strikes a perfect balance between the robustness of Swiss chard and the tender sweetness of spinach. Orach thrives even in scorching temperatures up to 104�F, making it an exceptionally easy-to-grow green for warm and hot weather. Both the edible stems and leaves can be used as a spinach substitute, whether boiled to remove bitterness or enjoyed raw in salads.
